Cilingir Sofrasi

At Learn to Cook Istanbul we believe that anyone who is interested in Turkish cuisine should also know a little about what drink best compliments it. We offer this as a gift to all of our friends who are interested.

Turkish wine making has undergone a Renaissance in the last two to three decades thanks to the devotion of the leading wine making families of Turkey. Wines are produced from local grape varieties (seldom seen outside of country) as well as the most popular grape varieties found around the world, which have adapted perfectly to the local climatic conditions. Turkey now produces world class wines among which there are many prestigious medal winning bottles.

The history of Turkish wine making is very interesting and rich. At Learn to Cook Istanbul before we talk about each of the complimentary drinks (a flight of white wine, rose wine, red wine and of course rakı), we will talk about Turkish oenology and food pairing.

Rakı, the national drink of Turkey, is also a grape based beverage, which is noted for its rich aniseed aroma. After each glass, we place more of the dishes that we cook on our table known as the “Çilingir Sofrası” or “Table of the Locksmith” as we believe that there is nothing that can’t be solved or resolved at a Çilingir Sofrası: good food, good drink and good companions can unlock any lock.
